Pulled Pork Hash

6 Tb. Olive oil
Approx. 1 ¾ lb. all purpose potatoes (boiled whole with skin on, then peeled and diced)
1-package Dinosaur BBQ Pulled Pork
1 med – large onion (small dice)
4 cloves garlic (minced)
2 – 3 jalapenos (minced)
3 – 4 tsp. Kosher salt
3 tsp. black pepper
3 tsp. chili powder
1 tsp. dry mustard
1 tsp. cumin
8 eggs
  1. Cook potatoes until soft, remove skin, and dice small
  2. Mix pulled pork with potatoes in bowl.
  3. Heat 2 Tbs. of oil and cook onions and peppers until softened, then add garlic til soft.
  4. Fold mix into pork and potatoes.
  5. Add remaining spices to mix, work at with your hands until fully blended.
  6. Form into 6 – 8 patties. Will yield 8 – 6oz patties – make sure they’re firm.
  7. Heat remaining oil and fry hash patties until browned and crispy, then flip. Brown on other side, then serve.
  8. Top each hash patty with a poached egg.
