Beer & BBQ Braised Beef Brisket

2 1/2 lbs. Beef Brisket
1/3 c. Olive Oil
1 med. onion, diced
2 celery stalks, diced
2 carrots, diced
2 jalapeno peppers, seeded and diced
2 cloves fresh garlic
2 bay leaves
12 oz. dark beer (such as a port or stout)
1 bottle Dinosaur Bar-B-Que Sensuous Slathering Sauce
Kosher salt and coarse ground pepper
- Preheat oven to 325 degrees
- Season brisket generously with salt and pepper. Heat olive oil on stove in a Dutch oven and sear brisket on each side (a couple of minutes on each side). Remove brisket and set aside.
- In same pan sauté onions, celery, carrots, bay leaves and peppers until soft; add garlic, scraping up any brown bits on the bottom of the pan. Add beer, Deglaze pan and cook out alcohol. Add BBQ sauce and mix well.
- Add brisket back to pan, cover with lid and place in 325 oven. Cook approximately 2 to 2 ˝ hours until brisket is tender when poked with a fork.
- Take brisket out of pan and set aside keeping it warm. Strain all pan sauce, reduce slightly skimming any fat. Pour over sliced meat, pour yourself another bottle of beer and enjoy!
