Grilled Mojito Portobello Stack

4 large Portobello mushroom caps, cleaned
1 bottle Mojito Marinade
1 small to medium red onion
1 package Dinosaur Bar-B-Que heat & serve Pulled Pork
6 oz. shredded cheese (cheddar, mozzarella or Monteray jack
- Wipe the Portobello with a damp papertowel. Place mushroom caps on a plate bottom side up and top with Mojito marinade. Rub excess marinade all over mushroom and let them marinate in refrigerator 2-8 hours.
- Slice onion very thin and toss with any excess marinade. Set aside.
- Place mushrooms on a medium-hot grill bottom side down for approximately 5 minutes. Flip and grill until mushrooms brown. Take off grill and set aside.
- Heat the pulled pork and place it inside mushroom cap.
- Top with marinated onion and grated cheese. Place under broiler or let cheese melt on grill with lid down.
- Serve and enjoy!
