(Feeds a crowd)
¼ lb. bacon – approx. 5 strips (diced small)
1 large onion (diced small)
1 large green pepper (diced small)
1 – 2 jalapenos (diced small)
2 – 3 stalks of celery (diced small)
4 cloves garlic (diced small)
2 bay leaves
1 lb. dried black eyed peas
32 oz. chicken broth
32 oz. water or chicken broth
2 Tbs. cider vinegar
2 Tbs. butter
1 cup white rice
½ package Dinosaur BBQ Pulled Pork
Salt, pepper, & hot sauce to taste
1) Render bacon until crisp. Remove from pan, leaving bacon grease.
2) Add to pan the onion, pepper, jalapeno, celery, and bay leaves. Cook until soft, then add garlic.
3) Add broth, water, black eyed peas, thyme, and cider vinegar. Bring to boil then turn down to simmer keeping partially covered. Cook approx. 1 – 1 ¼ hours until beans start to soften.
4) Add uncooked white rice and pulled pork; mix well and cook until rice fluffs, approx. 20 – 30 minutes. If it looks too dry, add more water.
5) To finish, fold in butter and season with salt, pepper, & hot sauce to taste.
