

Dinosaur BBQ Sauce wins Eating Well award!

(Serves 4)
Ingredients
8 chicken thighs
Cajun Foreplay
1 c. flour
1 c. peanut oil
1 heaping tsp. minced garlic
1 heaping tsp. minced ginger
1/4 c. toasted sesame seeds
2 small jalapeņo peppers, seeded and minced
1/2 c. soy sauce
2 tsp. lemon zest
Juice of 2 lemons
1 c. Sensuous Slathering Sauce
Step 1: Strip skin from chicken thighs and season 'em lightly with Cajun Foreplay. Toss them around in flour, knocking off excess.
Step 2: Pour 3/4'' peanut oil in a heavy skillet and fire it up over medium-high 'til its hot, but not smoking. Fry thighs for 20 minutes, turning once, 'til golden and cooked through.
Step 3: Meanwhile, heat 2 tbsp. peanut oil in small saucepan and heat over medium high heat. Add garlic, ginger, and jalapeņos to oil, and a dash of salt and pepper. Cook 'til vegetables are tender.
Step 4: Add soy sauce, lemon zest, lemon juice, and BBQ Sauce. Simmer for 5 minutes. Remove from heat & keep warm.
Step 5: When chicken is cooked remove from oil and let drain briefly. Dip each piece into sauce and arrange on platter. Sprinkle with toasted sesame seeds and serve with remaining sauce.
